Recommendations for solo travel organized trip to give as a gift to a graduating college senior?

Additional context, 24 year old male who has very limited travel experience. Looking for tour cos where he will meet good people, see interesting things (destination almost irrelevant because he’s never left the US) and have fun. He doesn’t drink so I don’t know if that matters or if there are sober tour cos. Thanks!
